I've seen it done before, but it's expensive and requires quite a bit of frame modding to get the chassis rigid. Plus if you do it you can never take it to a track and run it, they won't allow coupe vehicles that have had the top cut off.

I just recently watched a video where a guy converted an I6 coupe to a V8 roadster and the only thing he did to the frame was add sub-frame connectors. IfI did this it would be just for fun. We have a CHEAP I6 roller, bare bones we would like to do this to.

The chassis will flex all over the place. The coupe top is part of the rigidity of a unibody car. You chop it off and every time you turn a corner the body flexes all over the place, unsettling the car through turns. It's very unsafe.

There was a car at Barrett-Jackson last year with the top cut off and other mods. A permanent convertable.
If the guy in the video only added sub-frame connectors, don't take his word on anything.
Convertables have alot more metal underneath than a coupe. You can probably get the parts, just be prepared for alot of welding on the bottom the car.
