You should add a center console. You can also add a custom homemade one like one like the picture
I know its not the best but hell its still homemade.....
Heres another, I know its not the best looking mustang interior but he had did a decent job

its never a sellers market, especially with unfinished projects

finish it and you may get more for it from some old guy who wants a cruiser car but has no skills in finishing the rest of it

i had a center console stock, and it was in absolutly mint condition,..i listed it on ebay and got almost 500$ for it,...and have regreted selling it to this day,..i keep my eyes open on ebay all the time for a nice solid piece that needs to be touched up,...

i also like the open look for some reason,..i dont know why,...

i am very good with fiberglass, so that is also a option, i just never thought of it, cause i hate working with it,..its a Fing pain and a mess

I saw one on craigslist about 2 weeks ago for 175, If I see another one for under 300 I will let you know

Well, my former mechanic is asking 21k for his 66 fastback and it is in nearly mint condition, and all original. So throw some paint on there and you could get in that range
