Firewall to floor pans and but welding connections etc..?

I really hate to butt heads....but, in this case, I can't help it. The seams are not "butt-welded" Like 2+2 says, they are an overlap, but they are spot welded. The best way to replace them is the same way. Drill out the spot welds, and "plug -weld" in the same place. If you replace less than the full floor, then butt weld at that point. It will make the floor weaker though. The point though...oh, hell, I forgot the point. If you don't replace the floor as a unit, it will be weaker. Then again, we're just trying to hide s#$t though.....right?
If you aren't going to take the time to do it right.....why bother?

Sometimes (often?) replacing the entire floor is not needed, and sometimes it can be a big waste of time and effort.
Each car and project needs to be evaluated on it's own merits, a direction chosen, plan executed.
No doubt many cars will need a full replacement, others just a few patches of various size.
