Default New carburetor options

Hi guys, I recently acquired a 67 Mustang with a 200 inline 6 in it. It had a carburetor fire and nearly melted the entire carburetor and cracked the exhaust manifold in several locations. I'm going to replace the manifold with a header and want to put a new carburetor on it. The old one is beyond rebuilding. I've seen adapters to put Holley 350's on these. Are they worth it? And if so, what kind of throttle linkage would you use to make this work? What are your opinions as to good carb replacement options. Note that I will not be able to use the heat riser choke as I have a header going on this. Thank you!
