I got all my stuff from NPD. I think the upholstery was like $300 and the seat foams were like $98 per seat. Total of around $500 for front & rear upholstery and new front seat foams.
I thought about doing a two-tone, but I went with the all black pony.

I have 2007 mustang seats in my 67, still waiting for my friend to send me the pics. I got the 2 fronts and the back for 400 local so I was happy. Black leather, very comfortable, reclining and from a mustang to boot. The back seat is nice because it is a bucket bench, there is just less legroom for passengers

I have the Procar Rally seats in mine. With the adaptors, it's a direct bolt in. I have only installed the passenger so far and at 6'1", not too bad at all. On the drivers side, I have tilt wheel so hoping that will help if I wheel to knee issues.

It really depends on what you're planning for your coupe. If you are restomodiing you can do almost anything (with a bit of work) if you want them to look original the TMI setup is great. My mechanic is at SEMA right now with a car he did in the TMI booth. The material is great and they used 2005 V6 seats.
I am planning on restomodding my mustang since it's nowhere close to original or special. I'm looking at the Corbeau GTS II seats for the comfort and support.
The procar seats are really nice and look great in any classic mustang.
What are you doing for seat belts? Only a lap belt? I was thinking about a more modern seat with a built in seat belt.. any suggestions?
im 6'2" and used .75" square stock to clear the factory plastic housing which holds the reclining handle and aux switches (took out the power tracks). I am very comfortable with the fitment. I originally used 1.25" sq stock and it sat too high. I will post pictures tonight when i get home from work

In mine I used the Procar Sportsmans(steel frame) and then installed Schroth Racing's Ralley-4 harnessbelt(DOT approved).

Who cares how much horsepower it has, all that matters is how fast it goes!
13.20's with 2.25-2.30 60's, 40+ year old suspension sucks!
Best trap 107.11mph, we'll see what the new intake/carb setup does.
12.80 at 110.5mph NHRA DA corrected
The best fitting seat I have found is the recaro e-21 seats that you can find in bmw 320i's, they are super comfy and built better than any aftermarket or OEM seat, sit as low if not lower than the stockers and bolt right in using #266 ADAPTERS and generic scat/flofit sliders ....the attachment button isn't working for pics right now!
