Default Power steering spooky

Newbie here, I have a 97 v6 coupe with Eibach springs, and front and rear shocks. It has these aluminum adjustable plates on top of the front shocks. Running 17x9" Cobra wheels with 245/45 17 tires. The thing corners like it was riding a rail, but the power steering is acting odd. When you steer it it turns fine but doesn't want to come back toward center. You haft a stay on it and correct back. I pulled out most of the power steering fluid, put in some BG conditioner and refilled with new fluid. It helped a bit, but still not great. Any thoughts?

alignment is off..probably dont have enough caster
