whatever you get, id go with a 28 inch height tire if i could redo it instead of 27 inch. will eliminate more wheel gap while giving you a bit more ground clearance also. This will look better but be a bit heavier and therefore perform slightly worse.
What color is your car?
Since I plan to upgrade the suspension later with coil overs, I think I'm going to stay with a small tire height so I can lower it 2" or 1.5". Not sure if 27 height will work lol I have no idea. My car is yellow, no stripes...yet lol
TRex I might wind up going cheaper than 3k depending on how much work I can get during this semester. What other brands do you know of maybe around 2k?
I have a yellow 06 GT with charcoal leather as well, I'll post a picture later since my sig doesn't show when I'm mobile. I have 245/45/19 Pirellis on 2011GT Premium wheels. I like them and since they were take-offs I got them cheaper than any aftermarket wheel tire combo.

Mrr sales the same rim U2 in a 18 or 19 inch rim. The set cost me....ready?.....$1600 with tires!! The tires are not great but hey I couldn't pass up the deal. Good luck though and take your time, a wheel can either make or break your car.
Thats awesome, especially after I saw some of their stuff today when I checked out their website. I'm definetly going to pair them with pirellis though but I think I might not get the all-seasons because I don't feel like ill ever use them in the winter just so they stay nice and in great condition.
