Always go with a carbureted 302, you can put those into anything.

Not sure where you got 190? To the wheels it's usually never more than 180 stock, but to the flywheel it's about 210 stock... With full boltons, I doubt you'd be terribly far from that 2V, with the benefit of a newer, and smaller engine as well (I believe weight is nearly the same for the two engines ~40lbs. give or take?).

Out of curiosity, why not just supercharge the V6 and run with a conservative tune?
