Default Fuel injection

Greetings from Central Oregon!
I have a restored 1967 Mustang coupe, 289 C6 tranny. It currently has Holley 650 double pumper, no real issues there, dual exhaust. I am considering installing an Edlebrock Multi-Port EFI unit. Looking for reliability, driveability, gs mileage improvement. Not a racer, just a cruiser.
I think it's a good idea, if a bit spendy, so why don't I see more vintage Mustangs with EFI?
