Default Leather seats

From what I've read, the covers on the "leather" seats on the 05-09 GT with the IUP are not all leather. Question is, what parts are leather and what parts are not? I have not been able to find this information.

The whole seat is actually considered vinyl coated leather. It has a protective layer to it that will hold up better and it won't stain as easily as real leather.

So should I treat them with leather products or vinyl products?

I use both. Most people use my Leather Conditioning Spray, this works awesome on the leather/vinyl coated seats and you can also use it on the rest of the vinyl on the car. Optimum Leather Protectant is also another popular product. Both products smell like leather and dry to a nice factory finish.
