Well, when the acid in your stomach breaks down the tacos, it can convert it into sustenance and more times out of one produces gas.
And seeing as how some Pepperoni is made out of Beef (Same shiz in your tacos) it can produce a similar smelling (and tasting??) gas depending on the other nutrients currently in your stomach.
Also, it could be that you had Pepperoni Pizza or something earlier in the last 24 hours and it is just now being digested. Beef has to begin rotting inside your stomach for your body to digest it normally.

Oh, BTW, I had chicken salad from Wawa for lunch, and by the smell I am cranking out right now, I am afraid I could be on my way out. I had mini-wheats for breakfast and chicken salad for lunch. I pity my toilet when I get home lol.
