Some say the crank can "whip" the oil and create air bubbles that can accumulate in an oil pump and cause problems. I have never seen this "rumor" take place, even in cars that were 2-3 quarts over full.
On road auto X'ers have been known to add the extra quart as to not starve the engine for oil during hard cornering, braking, acceleration, etc.
Honestly, I wouldn't worry about it.

other than reduced engine efficiency from the crank whipping the top layer of the oil (if one quart would even raise it that high in the 4.0L)....nothing

I just recently switched from Mobil 1 full synth 5w20 to the Penzoil Ultra, and my engine seems to run a bit quieter. The Ultra probably doesn't make a very big difference, but Mobil 1 seems to have gone down hill so it was time for a change. Seems like kind of a waste to run an expensive synthetic in a 4.0l sixxer. When I had the 3.8l I just ran the partial synthetic Castrol oil and the engine never missed a beat the entire time I owned it.
