On my 08 we used 1 litre but did not flush the clutch line. Front calipers were replaced at the same time. We used Super Blue so were sure it was a complete flush.

I used about 1 1/4 - 1 1/2 when I did a flush, guess I pumped the brakes a little more than Sleeper did. Purchasing two liters turned out to be a wise decision because, after each track event, I bleed each brake about 5 pumps (theory being to get rid of the fluid nearest the caliper after the intense heat of a track day). So having the extra has served me well.

I reverse bleed, and by doing that there's always a chance you might have to do one corner more than once, so I always buy two quarts just in case. If you're replacing calipers you'll need to have two on hand for sure. It's easier to have more than you need than make a run to the parts store in the middle of the job.

How long to you use the fluid after it is opened? Do you do anything special after opening it to make sure water does not get absorbed into the fluid?

I just used up my left over 2nd liter. Took me about 4 months. I kept it sealed in the can it came in. It looks to be an air tight cap, at least as air tight as the cap on the master cylinder.
