The seats in my 2007 Saleen SC281 are pretty, but, well...

Let me put it this way: did you see that episode of Top Gear where Jeremy Clarkson is testing an AMG Black Mercedes, and he stops by the side of the road and sits on a pile of rocks and pronounces them more comfortable than the seats in the AMG? It's like that.

I see that Ford Racing sells the same Recaro seats you can get as options in newer model Mustangs. AmericanMuscle.com has 'em. However, they're said to be limited to late 2012 and up cars because "the airbag connector has changed".

Hm. Now, I know my way around a soldering iron and crimping tool, and I'm wondering if this is simply a matter of adapting to a different connector, or if there are electrical or controller changes that would make fitting these seats to an older car impractical.

Does anyone know, or know how I could find out?

For what it's worth it does say it does not fit 2011-Mid 2012 because of the change. It says nothing about earlier models, such as your 2007. I would call AM and see what they say, that or Ford to see if the 2007 airbag connectors are the same as the late 2012-2014.

A guy on Team Shelby installed a set in his 07 SGT. They physically bolted in fine, but he was unable to get the airbags to work as the connectors along with actual airbag module were different.

The question then is "does the seat have the proper sensors for the steering wheel airbag to work correctly?"

It can be done! I swapped the seats rails from my stock seats to a nice seats of GT500 recaros.

Also a possibility is switching out the actual seat airbags and wiring in the recaros for the 07 ones. It may be a possibility , I would suck having to take the covers off of some new seats to check but who knows , they may be able to be retrofitted in there.
