First one was OEM and it lasted almost 2k miles....

2nd one was one piece SS made by Carr and it lasted about 20k miles. Beat up one piston and chamber.

I used an off the shelf throttle cable holder...

I used an off the shelf throttle cable holder that had a provision for a spring. Or you can run a spring between the throttle linkage and a valve cover screw.

Keep in mind that any C headers will not drop down as low due to the difference in block height, so be prepared for a tight fit.
As for intake, pick whichever you can get easiest, and probably avoid...

When I converted from a 2b to 4b decades ago, I simply reused the same cable. It is still there from OEM...not sure why that should change as the linkage is in about the same location for both.

The W heads will provide good low end torque is about the best I can say about them.
4V C heads will do the opposite...high end HP. So neither is a good bet depending on what the use is.
