But, there are a lot to choose from. I went with Roush and loved the way they sounded. But, I ended up removing them and went with the GT500's after installing an off...

I agree that two sets of tires might be the way to go (that's what I do). And, summer tires can be a little slippery below 45 degrees. But, I also think saying that the OP will kill himself...

I use 2nd most of the time. I only use 1st for hard launches and maybe when stopped on a hill. Like Simon said, as long as you don't let it slip too much, you're fine.

I second the suggestion to scrap the muffler delete idea. I would just install Roush AB's and be done with it. I'd still have mine if I didn't remove the cats.
