Dunno about west texas but you can come to DFW and see some of the best.
If you don't look like a young guy you'll probably be happy at HPP (if you look like you're not living by yourself with a full time job they'll treat you like a 16 year old with dads checkbook, regardless) LT motorsports is here too, also a VERY good shop, owned by the owner of the 9 second RX-7.
