Post up local shops that deal with Mustangs. I'll start it.

Bickford Ford in Snohomish does quite a bit of aftermarket business. They have a parts guy that does nothing but order parts for and schedule the mods. They also have a specific mechanic who does most of the Mustang stuff.
They book 8 hours for a base Whipple install, 12 for intercooled. They also do Saleen blowers. I used them for some of my first mods when I was concerned about warranty issues. Now I'm on my own.

Took my car to Marysville Speed and Custom today. Those guys are great. I recommend them to anyone.
