Do you even have a concept of how "little" 2-3 inches would be? a 3" lift is cosidered the norm in the truck world.
I being serious here, there is no way to raise the rear that much and not alter the handling without some serious modification to the spring buckets. Using a spring spacer for that kind of lift would put the spring out of the buckets, and longer springs would have to be custom made probably.

My 2002 had the rake you are talking about, via the ford racing b or c springs, I don't remember which one. It's usually accomplished these days by lowering the front more than the rear, nobody puts a lift on a mustang.
With that said, i have no idea how you'd put a hockey puck in the middle of a spring, the only options are one end or the other. And the springs + shocks are called coilovers. I don't know that you can get one to adjust ride height higher than stock, because usually people want to improve handling, not make it worse.

I thought ministocks ran jacking bolts(wedgebolts) like the sportsman and latemodels and thats how you set ride height.

Raising or lowering an IRS more than maybe an inch can buy you problems with (excessive) half shaft angularity. Think U-joints, two on each half shaft. People have already had problems lowering the S550, and there's no reason to expect raising by comparable amounts to be any different.
My opinion - the best you can do to get your "appearance rake" would be to shim the rear up an inch and lower the front an inch. That buys you 2" of rake over the wheelbase length without necessitating overly firm springs at either end.
If that's not enough, run taller tires in the back. Same width as stock but 5 profile points taller so it'll still fit on your wheels (for example, 255/45 vs 255/40) will buy you another 1/2" rear ride height, and the ABS & AdvanceTrak should still be able to tolerate the new rear tires being a whole inch taller than the front tires.
Don't be too surprised if the handing changes a bit, and probably not for the better.
