Don't let those speedo vids determine your opinion too much, PD. I still think you should do fine against any of those cars. A lightly modded SVT should have an edge though.
Looks like it runs strong. But to seriouslly answer your question. I've run a best of 12.6 on street tires. So the 5.0 and the camaro you should have Provided you don't go up in a smoke cloud. You almost have to launch like your casually pulling away from a red light to get the best 60 in the skittle. The Cobra would be interesting but I'm also 3 and 0 against pullied cobras at the track. You should be a high 11 second car on slicks and trap somewhere between 115 and 120 depending on how well your tuned. The pullied cobras are usally in that range also. You'll have to go over to the SRTforums and get in on the 50 trim vs stage 3 battle.
I'm not fully use to the car yet but personally the best way I've been able to get to car going from a stop is to slip it hard from about 2.5 K and by ~20 mph it's fully spooled. I'm also launching with no boost though. I really need to go to the track but I have a baby due this week so it will probably have to wait till next season. By then I want to get tires, wot box, a meth kit and bump it up from 22psi to about 27psi. I was tuned by Nigel @ Tru Dyno. I'm sure you know of them.

Congrats on the youngen. I'm done drag racing the skittle. I'm no good at it. Keep breaking the car. You'll have a blast with it on slicks.
