Lightbulb When to shift??

I have a 2000 mustang v6 and i am curious when should i shift when racing. The car doesnt have much power since its a 3.8, but i have a good amount of money into the car for starters. Mods include magnaflow cat back exhaust, cold air intake, and a short throw shifter. I mostly look up videos of cobras shifting at 5000 rpm and they sound like they still have more power. Most of the time i shift at 2500 rpm driving on the streets. When i shift at 3000, the car sounds like it doesnt have much more power and it sounds high pitch, so i shift into the next gear. Is this normal for a v6? Is it because i dont have as much horsepower as a v8?? Can someone please tell me what rpm's i should shift at in each gear, so i can build up more speed?? Thanks.

You should shift a car at or near the redline on the speedo. I could go into detail as to why, but that's when you should shift a factory car at WOT.
