Called American Muscle, and they have none for V6's + the guy said it's an awful idea as even a 75 shot on a stock motor will destroy it.

First, sorry that our rep didn't give you great information over the phone. If you remember who you spoke to, give me a shout via PM and let me know. I want to make sure everyone is up to speed.
Nitrous can be a very safe power adder if all of the right things are taken into consideration. I'm currently in the process of doing a 100-shot of Nitrous on my 2011 GT and it's about making sure you get everything you need and tuned properly. Nitrous gets a bad name from people bolting the kit on and thinking that's it.

A 50-75 shot on your V6 will be perfect. I probably wouldn't go much higher than that for now, but you'll still get a huge gain out of it! You'll want to get a wet system for the necessary added fuel demands (I'm personally not a fan of dry systems) and make sure that your tuner is pulling 2-3 degrees of timing for a 50-75 shot where the nitrous is engaged. Which brings me to my next point... You'll also want to purchase a window switch, so that the nitrous only sprays during a certain RPM-range and not just every time you go wide-open-throttle.
If you do this and you make sure to stick to a good brand name kit (Zex and Nitrous Express are my personal recommendations).
We don't currently carry a kit for the 99-04 V6's, but you should be able to get a universal system for Ford EFI that does the job. I have seen a few people buy a GT kit and modify it to work, but that's completely at your discretion. A shop should be able to make it happen with a few components.
