'07 didn't have 2.73 as an option, in '07 the factory rear ends were 3.31, 3.55, and 3.73.

So either a typo and he meant 3.73, or he changed the ring and pinion for MPG purposes.
Or the typo could be on the year because in 2011/12 Ford started putting 2.73 on Mustangs (for mpg for one reason)

I just posted for sale a complete 8.8 inch rear end all essembled with Saleen installed 3:73 gears. ( came out of my 2006 saleen mustang) It has less than 11k miles on it and it was working flawlessly when I removed it just this past weekend. Email me or call me if u are interested.

i installed motive 3.73`s and the frpp t lok, bought from am, in my 7.5 about 40k ago and have beat the tar out of it on the street and strip, besides being my dd and its held up well so far. ive been running 275 `s and have about burn this set up, but never had any drag tires though. i would like to upgrade to the 8.8 someday myself. 1299.00 with free shipping doesnt sound all that bad for a brand spankin new rear end and it will fit into a v6 s197, but that low mileage saleen sounds great too. seems like all the prices have been going up.

added a chrome cover when i did my break in gear oil change, mr. gasket cover, gasket and bolts from cjpony for $30

ya, the 05-09 v6 7.5`s only came 3.31. theres a sticker on the rear end cover that shows 3.31. pretty sure only the gt`s had the other 2 options
