Keep your eyes on craigslist, junkyards, and ebay/amazon to find an OEM 8.8 with 3.73s used, or go and buy a new 8.8 with 3.73s.
The new 8.8 with 3.73s typically go anywhere from $1200-$1400 plus factoring in install. So like I said, it may be worth it to you, it may not.
If a muffler shop is asking $1k to do a dual exhaust, do me a favor and laugh obnoxiously in their collective faces and leave happily. The only reason for them to charge you that much is that they have no idea what the hell they're doing, they're taking your wallet for a joy ride, or they're installing/modifying a catback exhaust from a supercar bought from a dealer. Your shop has no idea what the hell they're doing, I'd suggest finding another.

I have the ASP Underdrive pulley for the V6 mustang, noticable increase, but i went for my mods in this order:
Intake and Tune, then gears and t-lock or 8.8 upgrade with 3.73's. Then go for Dual Exhaust, Shorty Headers, and Pulley

FWIW...
I installed a new 8.8 w/3.73's in my car from newtakeoff.... I called them and told them that I would buy it at 10% or no deal... got it for 900 shipped and installed it by myself in the driveway in about 5 hours (i'm a violin teacher)...
i say go for it...

Now, I have to consider changing rims and tires, just damaged my passenger side front rims last night...
