I currently have my 90'GT lowered 1"-1.25"
I have Weld Draglites w/ 205/60/15 & 255/60/15
------
I'm looking to get Saleen SC Replica wheels, 17x8 in the front and 17x9 in the back
I'm concerned about my tires rubbing, at 255/40/17 and 275/40/17
------What do you think?

Your OEM tire diameter is 25.6" and rear tires are right there. You may have a bit of trouble running a 275 out back on a Fox Body. This is pretty maxed out on clearance and will surely need to invite Sister Sledge and M.C. Hammer over for an afternoon of work under your fender wells.
The fronts should be OK, but both are gonna need to be at the proper off-set to avoid big issues of rubbing. If your still at OEM spindles and such, you need to be looking for +15mm (front) +18mm (back) or very close to these.
Am I to assume you are looking for a good wheel on the 1/4 mile? If so, why not get a set of 15"s out back?

No, I have Weld Draglites on my car right now. I want to switch to Saleen SC wheels..
Those wheels have an offset of +19mm, with a backspacing of 5.2" and work best with a 255/40/17 tire.
On a STOCK mustang = this is a good fit... However, my car is lowered... I want to avoid rolling fenders = that's my main concern.

Lowered or not.... (See my title of the following Mighty Zep vid) the off-set remains unchanged
If you hit a big enough bump, the tire would hit the fender regardless of lowered or not. Besides, rolling fenders is gonna be required if you go 275's out back anyway and not a big deal. Hell, I have almost zero lip on the underside of my fenders, as I have cut it nearly all the way off. Looks perfect from the outside, but not much under there, I can assure you of that

American Muscle states that a 245/40/17" tire on a 9" wheel will be fine (AKA: not rub) @ +18mm off-set. I see no issues running a 255/40/17" wheel, but cannot guarantee you will not need to do a little bending of the inner tabs of fenders. This is not an issue, beyond a small pair of pliers to curl the tabs back in a bit. It is a good idea to bend these tabs regardless, as they can cause some damage to tires if they hit them.
IIRC, the likely issues are at 9:00 & 12:00 of the front fenders.

How big?
I have a 2011 Mustang GT 5.0 with stock tires and wheels, 18in. I have lowered the car 1.5 front and rear.
I am now wanting to put bigger tires and wheels on. I would like to go 19in rear, with as wide of tires I can fit under it. Not sure about the front, weather to stay 18 or go 19 and not as wide as the rear.
Any and all thoughts would help.

You can easily install a set of 9"s 10"s on your car. You can go as wide as 9.5"s and 11"s if you want to push it, but specific tire sizes become real important at this point and don't know exactly what they needt to be.
I would recommend avoiding a 19" wheel, as tires are more limited in selection and, as a result, more expensive. As always, I will ask the following question of you...
