Simple questions but.. I have Goodyear Eagle GT's 225 55 16's. What tire pressure would you suggest? 34 psi? The max tire psi on the side of the tire is 51, which I realize is the "max" and way too high but is 34 too low?

I can give you a starting point if you can tell me what the OE tire size for your car was (including its load index number and whether it's a standard load or extra load tire) and what the recommended inflation pressure on the sticker for your car gives.

34 should be ok... depends on what you are doing with it though.
normal street driving you should be just fine, autocross you will possibly want to bump up the px a little, and drag racing you might want to lower it.
Also with a little extra px you can possibly get better gas mileage, just don't do it too much or else the little difference in mileage will mean more wear on the tire and needing to replace them sooner.
There are lots of variables so more information will help give a better answer.
