I have found 19"s to be a limited market for tires, as it is just a less common size. Probably the most common size is 18" and will find FAR more options and just about guarantee the same make/model of tire will be less expensive than a 19".
I happen to like an 18" wheel on all post Fox Body Mustangs. Regardless of the size, the needs of YOU, the driver, are far more important than what looks good

I was looking for a bit more detail for your driving needs, but guessing just a moderate DD with no hard cornering or 1/4 mile use?
In such a case, I figure you are gonna have lots of wet weather in WA, but do you get snow/ice? If so, you are gonna have to stick with an A/S tire that will seriously cut down on the "fun-factor" of some driving activities. I am no good at all with such tires and will hope that Stoenr or Luke chimes in to help with a choice on them.
If it is reasonable to keep your current Draglites with Winter tires and the new Saleen SC wheels with a more performance oriented tire, you may consider this as well.

I actually don't drive very much. I'm retired and don't drive much more than 30 or 40 miles in a week.
I am thinking of making a road trip down Hwy 101, just for something to do. I defiantly want to take it to the local drag strip(we have an 1/8 and 1/4)about the same distance from my home. Still want wider in the rear.
We do get much snow and ice usually . Will not drive much in bad weather if any. Not sure what you mean about draglites as I have stock wheels and tires 18"
