I am getting ready to paint mine. My car is Windveil blue so it has a lot of pearl in the paint which causes the price of the paint to go up. A pint was $45.Adhesion promotor was around $15. I got some other misc. stuff from the paint store but all of itwas around $80.I sanded mine with 320 and then wet sanded with 400. You need some roughness for the adhesion promotor to stick to. I would not go to 1000 grit prior to painting. Thats a bit too slick. If you need to you can wet sand inbetweenthe base coats and also inbetween the clear coatswith 1500 grit.
The mirrors are a snap to remove from the car.
I am going to paint my mirrors and a Roush hood scoop for less than $100 but im doing it all myself. $700 is way out of line even if they do all the sanding because it does not take that long to do.

i didnt do my trim, nor does it look bad not having done it along with the mirrors, but i had my mirrors painted (lime) for $80 total, and i tipped the guy. i prepped them, but hell, $80 bucks.
