Will these GT500 rims and tires fit my 07 GT?

The GT500 wheels should be 18 x 9.5 with a 48mm offset, if I recall my specs correctly. Those tire sizes you mentioned are fine for those wheels. See my sig. Your 285's will be a tad wider than my 275's and I have a lot of room.

The rims and tires I am getting still have the original GT500 TPMS in them. Will these work with my Mustang GT? Will I have a TPMS light show up on the dash? If so, what can I do to get the TPMS to work or get rid of the TPMS light?

The SJB will need to be retrained by you or Ford.
You - Purchase a TPMS trainer tool and Do It Yourself.
Ford - They do it with their equipment.
The sensors need to be the same color
as the TPMS sensors you now have.
No way to defeate the TPMS light short
of putting your stock trained TPMS sensors
is a PVC tube with a schrader valve on it,
air it up to vehicle pressure specs and toss it
in the trunk.
To the OP, you might have steering rub and
need steering stops.
Here are the 'guidelines' set forth by Ford:
For vehicles with 17" wheels from the factory:
-installing 18" x 8.5" or 18" x 9.5" wheels, use steering stop 6R3Z-3932-CA
Short story, if you have/had factory equipped 17x8" on that GT,
you will need steering stops for the 18" rims. Factory equiped 18x8.5"
bullits, no steering stops needed.

Yes, they should. 05-09 TPMS systems are backwards compatable.
