By looking at pictures of the rear emblems on the GT500's and BULLITT, it looks to me that they are a brushed metal design and not chrome like what comes on the GT/V6 models. Am i correct? I am wondering if anyone knows if the BULLITT or Shelby emblem in the center of it can come off like one the standard ones. Not sure if it is molded directly to the emeblem or just an insert.

Can anyone confirm this for me? i want to replace the chrome emblem with a brushed one, but want to put a custom emblem in the center.

Yes, the rear emblems on the both are brushed and not chrome. I'm pretty sure with a little work you could change out the center.
