At take-off I do notice my car takes an extra moment to get going with my
19" wheels compared to my stock 17" bullets. My solution was to supercharge my car.

The stock 18" wheels weigh in the mid to upper 20#'s so those 19's aren't going to cause you to notice much if any difference. The addition of ANY rotational mass will negatively impact acceleration.
