Alas... I've been a hard core pumpkin jacker. Now I see why you ain't suppose to... Crap...
Oh well.. I've been hearing the "ratchet" from the limited slip around corners. Guess it's time to swap out the clutch discs anyway..

Did you just bend the cover with the jack or was there more damage to the differential casing?
My jack has a flat saddle with a rubber pad. I also put a small towel on the saddle to provide additional cushion.
The bottom lip of my differential cover does not cover as low to the case as yours.
