So is it safe to leave the car in first, without a parkbrake?
I am having to do this because this morning my parkbrake froze over for the first time. So tonight I am just leaving it in first, without a parkbrake. The incline is minimal.

I've owned many vehicles with manual trans and only one was prone to jumping out of gear. It was a old beater back in my youth. I think it should be ok, but if it makes you feel better stick a brick or something similar behind a tire till the weather warms up.

It'll be fine. Putting the car in gear will hold it in place. It might roll toward the incline a tiny little bit (maybe an inch, if that), but then the transmission will catch the car and hold it there.
Park brake vs. no park brake is really just a matter of preference, although on steep inclines it's recommended you engage the park brake (in addition to putting it in gear, if that's what you usually do.)

I put mine in reverse if possible as it is the least used and the strongest gear....less chance of slippage! Oh just remember after starting the car remember that you are in reverse so there are no accidents
