General limits:

I'm lowered 2.5in and run 255 front and 275 back, with a 27.0 tire in front and a 27.6 tire in back. I've rubbed a couple times on really hard bumps is all.

I'm going for the same look at Tilt is shooting for but I refuse to give up my 16" knockoff style rims.
Dont want to go to a 20 or giant rim, or lowering the car at all.
Here is a good tire calculator site that you can compare two different sizes to see if they are the same or how much bigger or smaller they are..

Example..
295/30/20 (as run by Mellow) = 27" tall with 3.5" of sidewall based on the calculator
The equivalent in a 16" rim would be 255/55r16 which is 27" tall and 5.5" of sidewall..
255/55r16 comes in a Grabber UHP @ $76 each
And Goodyear Wrangler F1 @$203 each Yikes..
235/60r16 put you at 27.1" tallwith 5.6" of sidewall..
common tires in this size are..
Kuhmo ECSTA ASX @ $67 each tirerack
Sumitomo HTR Z II @ $71 each
Grabber UHP @ $71 each (Street/sport truck tire though)
BFG Traction T/A H @$100each
Pirelli P6 @$110

I think a 235 is WAY to skinny of a tire to put on a mustang. I realize you are going for that muscle car classic look, but that would look real whimpy from the back. The 255 wouldnt be bad, but still a little thin. IMHO a nice fat tire in the back screams muscle car. If you have to sacrafice sidewall to do so i think it would be worth it.

The bf't/a's will fit, how would i know? i have them. they have about 200 miles on them , hey you wanna buy them? i am going to get bfg's in the 285 60 16 size, so i'll make you a great deal say 175 for the pair you pay shipping , like i said about 200 miles on them.

Are you running those 285/60r16's on the stock 16"x7" rims, or are they on a 16x9 or 10 aftermarket rim?
I'd love to run that tire size.
I agree that the 235 is really skinny for the rear tires, better for the fronts.
I'd prefer at least a 255/60. I was running the 255/60r15 BFG radial T/As on my Grand National with 15x7 rims.
Swapped them out for a set of 275/50r15s with no problems once the 255s wore out. Really badass looking on a GN.
Any pix of 255/60 or larger on a 16" rim would be appreciated.
