The a/c compressor is only on (hence, its trying to cool)if you have your a/c switch on. The more you turn your temperature control **** to the red zone, the more hot air (from your heat coils) is being introduced into the air flow.

You have a heater and an AC unit, the heater ducting use's the same fan system to circulate air as the AC unit does.
The AC has two different air systems, One that takes air from outside and mix's it with cabin air as it gets cool, the (Max AC) setting shuts off the outside air and
Re-circulates cabin air. The defroster is also a AC setting but the duct work take the air to the windshield instead of out the dash. Mixing warm air with the defroster sometimes helps clear the windshield.

The A/C system is a dehumidifier. Dont worry about the temperature setting messing anything up. When you use the defroster in the winter, its for warm air to remove the moisture condesation inside, right? Well, every car made now, and for the most part, for at least the last10 years, turns on the a/c compressor to blowdry, warm air to help it clear faster.

actually it's not the WARM air but DRY air that clears the windshield quickly.
I just wish that we could use the setting for windshield only or windshield/floor without turning on the A/C compressor. I once did that and left it on that position and for the next day was wondering why my car was making a whining noise when I shut down the engine...

I agree we should have the choice to decide if air comes on or not depending on where we have setting at (i.e. windsheild or windsheild/floor etc).
