I'm doing a bunch of searches and I'm gravitating towards the Autometer Cobalt gauges as well. The question that I have is what is the difference between the electrical and mechanical and which should I go with? Your help is much appreciated!

I have the electrical. I did not instal mine so someone correct me if I'm wrong here. The electrical use a sending unit and wire to feed the info to the gauges. The mechanicals actualy pipe the fluids in question to the gaugefor a reading. I could be completely wrong there. The only other gauges I put on a car were back in 1983[&:].

That explanation is correct.
You want to avoid putting mechanical gauges in the interior though. They are good for cowl and hood mounted positions out of the cockpit usually. (You don't want gas spraying in your interior at 60 PSI if the line ruptures to the gauge)
Full sweep means that they have a needle that sweeps around the full face (about 270 degree) and not just across the top of the gauge
