So Stephen, if I understand correctly, you arr exposure bracket shooting right? What spread of exposures are you covering generally, I mean, how over/under do you expose on the outer two images?

Just search for photography tutorials and you'll probably come up with a whole bunch of stuff. It's really just practice and taking the camera out of automatic. One thing I notice is the speed is too fast. The second thing I notice is the white balance. You need to do a custom whitebalance to get the best looking image. Sometimes it can be fixed in photoshop, but better to be safe than sorry. It took me about 2 months after getting my Rebel XT to finally take it out of auto mode. I typically should on Av, which allows me to chose the aperture, and the camera will choose the speed. That works well most of the time. But for stuff I have the time to sit there and fiddle with the settings, I go fully manual.

Well, my 1D doesn't even have an Auto mode so that's not an issue LOL
That interior image was shot at F18 to keep the DOF deep enough, the speed was around the 30 sec mark +/- the exposure bracketing. There was some ambient Orangelight coming in the garage window from the setting sun which may have been affecting the White Balance, I'll give it a go with total surrounding darkness......
