for best coating, go with Swaintech. I got many turbo manifolds, headers, and exhaust components coated by them. Its by far the best coating and most durable i've used. Polydyn and Jet-Hot and other paint-based ceramics did not last too long nor retained heat as good as swaintech.
Swaintech DRASTICALLY reduced my engine temps. Its pricey, but damn worth the cost if u really want thermal insulation.

BBK nice price and peformance if you match up their longtubes and downpipe
Also pacesetter may be cheapest, and ugliest, but the few people I've talked to who had them liked them.
IMO, longtube setups are overpriced when over $900, some as much as $1400. You should be able to get a good catless setup for $700-$800....

Oh yeah to answer the original question.... You need to get ceramic. The other options turn colors and corrode and should never be used imo, and there is so much heat.
Ceramic is one of those rare upgrades that is actually not a gimmick for once.

I've got ceramic coats JBA's on my truck. My stang has JBA LT's uncoated 409 s/s. Do I notice a diff in underhood heat between the two?? No, I don't. Do the ceramic coats look better? No, they don't really (the trucks are the titanium coat which is kinda ugly I think).
In the long run, the ceramic coated will probably last longer, thats about it. But when you're talking about 5-6 years uncoated 409 s/s as opposed to 9-10 years for the ceramic coats, who cares?

Oh yeah, also if you go with long tubes make sure to set some money aside for new motor mounts too. Makes no sense to install LT's w/o new engine mounts. They already have to lift the motor and if you have clearance issues you'll have to get some anyway. I did and it sucked to have to go backto my shop and have themounts installed (though it did give them a chance to re-tighten everything). Two birds at once so to speak.

Thanks alot Rubri..for the advice......im thinking bout getting the Mac LTs and the off prochamber........at the same time I am thinking maybe CNC Ported heads..lol...i dont know...im gonna have all these parts sitting in my room with no money to install them....but i think i i got all my stuff in ....4.10s,tci 3000 stall, LTs and prochamber, Steeda Deletes and if i get the heads and comp cams i might be at 380rwhp or more with a good tune......N/A!!
