Default s197 or 60s mustang?

If you had to pick, both brand new, today, would you take an s197 mustang or a 1967 mustang? Both would have 0 miles on the odometer in flawless condition straight off the factory line.

I feel like as much as I like the s197, a 67 mustang is the real deal and I would opt for that instead.

i'd think a 67 with 0 miles would be worth a hell of a lot more than an 07, so that's what I'm going with.

Question is too general. Are you saying a '67 6 cylinder coupe over an '07 GT500(which is a S197)? Clarify your question. Any '67 Shelby would be worth more than any '08 S197(even the GT500KR-at sticker), so that's obvious. Which model vs which model?

Technology has developed for a reason, not by coincedence. No reason to go with old technology, including cars.
