Carbon strut brace besides this?
I'm trying to decide on a carbon fiber strut brace. I've found one on the market so far, by Niche Preformance, and I'm looking to find a few others as I'm not sure this is substantial enough.

What do you mean by "substantial" enough? Carbon fiber is stronger than steel and that looks to be one of the more solid packages I've seen. Must braces only bol up to the inner two strut bolts, but this one bolts to all four.

Hmmm, the ideal strut brace is astraight bar running across the turret tops. As the Mustang motor sits above the strut tops it's required that the bar be bent which is going to allow the thing to bend.
Now, make one from Carbon, withthe requiredbend, and you have a toy. The maximum strength in carbon is achievable only when you utilise it properly, this is not as it's relying on the carbon to resist that bending.
Look at F1 or Indycar suspension, it'll take hammer all day long in the right axis, but if the driver clips a cone or curb and forces it in a different axis - SNAP !!!
