american muscle saids the best size tire for the 18X9 rim is a 255/45-18 . concept mikes doesn't even offer that size. They have some odd size like 245/40-18. Will the tire Guru please stand up?

245/40/18 is too skinny and too short.

most will tell you 255/45/18 is the optimal size at least for the front wheels if you want to put bigger tires in rear

Most 245/45-18's are close enough visually to 255/45-18's that most people would not be able to tell the difference without looking at the size molded into the sidewall. Especially when mounted on the same width wheel. Or when you're moving.

Either the 245/40-18 or the 275/35-18 size is over an inch and a quarter shorter of a tire than any of the 27" tall OE sizes. That much diffference anybody with only half-decent eyesight would definitely notice.

I just bought a set of Nitto 255/45 18s from Mike at Cruzin concepts, they had that size in several brands.

if you're going bigger from stock 235's and getting new wheels too, you might as well get at least 255's. I think 45 series would help with the ride comfort more.
I can't see why anyone would go from 235's to 245's...
