You can send it in to Saleen for anything you want from their range. It'll never make it to the Saleen register but in all respects it'll be real. After all, all the Saleens were born GT's

You should decide what kit you want to use and go ahead and build it yourself. As long as you're satisfied with the results what difference does it make if there is a number stamped on it. If don't correctly, it will be the same as one coming from Roush or Saleen (or any other) without the stamp and you'll feel good about what you've built. It won't be cheap though but will be cheaper than if you get one from those places. I did!
