Where can I jack the rear up to put my jackstands under the pinch welds???

I've jacked the car from the pumpkin many times over the past three years, no problems. However, in your case, since you're installing rear springs, this is not where you want to jack from. The easiest place for me was to jack from the foward LCA connection point. (where the LCA meets the body). This allows the axle to drop and the spring to decompress, so you can get them out and the new ones in. Just do one side at a time.

In the end, you're still a pumpkin jacker, but now you're proud of it!!
You're also allowed to bitchslap anyone that tells you your axles are bent.
In fact, wack them with your bent axles.

Were you not listening closely as advised?

This practice is so common good luck getting a car that hasn't been jacked up by the diff at one point or another. I bought mine used with 4500 miles on it and came to find out it had been jacked up that way at least once before I got it.
If it bothers you I honestly would make sure to tell every shop you ever take the car in to NOT to do this before you leave it with them. Otherwise don't be surprised...

And whats all this about taking your stang to a shop?
If I cant fix it myself, it cant be fixed.
Its time to sell her at that point and start fresh.
And if for some ungodly reason I have to be towed,
I keep the Ford recommended towing instructions in
my glove box just so there wont be any confusion
about the proper way to tow the stang.

Not everyone has a plethora of tools or the help and experience to tackle every job. There are some things I am not willing to even attempt on my own. Clutch install is one. There are a couple others. Some of them are doable in the sense that they probably aren't rocket science but are a huge PITA. Headers falls into that category. I haven't decided on doing that one on my own or not yet.
