I think if you like to maintain the retro look of the Stang, the OE Bullitts will do it for you. I actually like the OE bullitts on my g/f's '06 better than I liked my stock fan blades (which I've since replaced).

I'm a guy who likes to see sidewall, and I'm here to tell ya - Yep, that's way too much rubber.
I hate "blingy" also, but I think, paired with the right size tire, you'd be fine. I don't think those wheels look too blingy because they're 17". If you had that design 18" - 20" and up, then you start to look blingy.
Also, if you just went with changing out the rubber for now, you could always replace the wheels with another set of 17".
Now, all that may be irrelevant. based on the poor judgment displayed with the previous owners choice of tire, I'd be suspicious of whether or not he took the time to find wheels with the correct offset. I'd check that before you decide anything. If those wheels aren't the correct offset, your decision would probably be a bit easier to make.

Ok, looks like we have a consensus here that my current wheels are tires look like crap! I never liked them myself, but I got such a great deal on the car I decided I'd buy it and just replace them later. Digitalcos also makes a good point that I have no idea if these rims even fit correctly. It will be better just to start off with OEM rims and make sure they are right. There's a shop on EBay that has brand new Bullitt rims AND stock Pirellis for just $499 total. That's too good of a deal to pass up, even with the $140 shipping charge. I can always upgrade tires when I replace them next.
Several of you asked my tire and wheel size. The wheels really are 17s, though they look smaller because the tires are so huge. The tires are 235/65/17.
