I'm going though some insurance fighting at the time as well. and believe me it SUCKS.
I had to yell and scream at a bunch of people over the phone just so I can get a OEM windshiled. They wanted to put some aftermarket crap one on that didn't even have the pony logo. Finally they gave me an OEM one.

Now I'm dealing with some paint issues and some damage the stealership did to my car.
All I can say is KEEP yelling. someone will hear you eventually, hopefully.
As far as parts, just like everyone said just have the bodyshop order the parts. they get cost price which is cheaper, and you might just be able to do the GT500 front end and not spend a penny. it's all about what they pay at the moment with you. Not what " they " want to put on your car. if the check covers all the aftermarket stuff you want to put on, you should take it.
