I think legendlime's point is that you have to be careful not to make changes to your car just for the sake of making a change. Make sure you're spending the money because you really think it will make the car look better and be easier to maintain like you say.
With that being said I agree with most everyone else that says matte black will look a lot better than gloss. It's more aggressive and has more character imo.

Heck... you want aggressive, character and unique?
Then put on di-noc carbon fiber 11" rally stripes. They're not too glossy (kind of a satin finish) and you'll turn heads. Tis not every day people see something like that. Plus the pattern will hide almost all scratches and such.
I'm going to experiment with that myself when I redo my stripes in the summer.
Below is a video of what it looks like being installed on a mini cooper. You can see it's a fairly matte finish. I just did a friend of mine's entire hood on his acura. An entire hood is a bit much for a Stang IMO, but rally stripes would be awesome.
