Cooling fans + running hot

Cooling fans + running hot
So I never really paid attention to this until now
I installed an autometer water temp guage, sensor on the upper rad hose.
For the longest time I have been running a Bama tune with their own fan settings and my car usually runs at 176 degrees F ( 80 Celsius )
Recently I went back to stock and man does it run hot ! 212 degrees F ( 100 Celsius ) and the fan does not go on !
So, what temperature does the fan usually turn on low / hi speed ?
Im wondering if this is part of the stock settings or if my fan is faulty.
Any help would be great.
Thanks

Thats stock.
The difference between the CTS and your guage
can be off by 5 degrees or more.
But, yes the cooling fan only runs when the
CTS gets above 210 degrees.
I said fork that and added a Painless 185 on/170 off
temp switch for the fan in the upper
radiator hose and a STANT 175 degree thermostat
(OEM is 195 degree) and dont see temps above 175
AC off and 180 AC on.

My SCT tuner allows you to set when the fan kicks in, it's one of the tune modification options. My tune already had it kick in kinda early but I set it to 170 degrees. That's when my thermostat opens so there's not much point in kicking it in before then. Running the AC will cause the fan to kick on no matter what the temp is.
