Don't know anything about mods on the yellow one or what it's trying to go for. But if it's unmodified or very lightly modded, your choice should be between that one and the black one.
The only time that somebody else's mods make complete sense is if they're all exactly the same mods you'd make for yourself, or at least close enough that you would not be likely to change any of them out. That's part of why you shouldn't pay top $ for a car with mods even if it has NOT been thrashed to within an inch of its life.

Make sure you drive it at all speeds and check that everything is right; rattles; transmission noises; belts; check the car history; look the body for signs of damages.
I'll take the low milage one; I don't know but black mustangs look better to me; the only thing I would change of that mustang is the wheels; something like the wheels on the 2012 gt500 would look bad *** on that black stang.
About the modded one; those mods are expensive if you do it yourself; so it would be up to you if you.
ah congrats I would like to upgrade to a v8 too; must me cool; In my case I would be happy with an 2010 gt; there is one at my local dealer with all the toys and accessories for 25000; it is a tad high; but that is the price of a new v6 so...

Go with whatever car you are drawn to. You know which one is right for you. Whichever one speaks to you and you feel attached to.
Now, that said, Id go for one with low miles. A blank canvas. Make her yours. Kind of like the difference between marrying a 18 or 80 year old. The 18 year old is young fresh and trainable so you can make her whatever you want her to be

And not to be a buzz killington buttt you may also want to consider the increase in your insurance premium that would come w a GT
putting the 5k into a blower for your V6 will save you 2ka year in insurance
I almost got a GT instead of a V6 when I was getting mine at 18, and that was the difference
