'New to me' GT, Couple Questions

Awesome! I'm guessing not, but do you know if the non-Shaker systems have any amplifiers in line?

Yes they are amplified, I am fairly certain that one of the amps is by your left knee under the dashboard. You should be able to hook up the speakers with the amp still installed without any issues, but if you want a higher quality setup you would need to get your own amp and install that. You can get an amp with a speaker level input and just run wires to the speakers, or get a normal amp and buy a converter and you won't have to worry about what amp to get. Most new amps should have the speaker level input, but some dont.
I have done 2 mustang sound systems now, and I did my own amps on the final setup, but I think on the first one I just speakers for a while and I never had any issues.

Wait, scratch that, I didn't see the "non-shaker" part. Check where I said the amp was, above the hood release on the side wall by your left knee, and see if there is a silver box with fins. If there is then you are most likely amped, if not then you are most likely not amped. sorry for the confusion.
