What? 4.10's would be best for 40-120, but you will be low in 3rd or very high in 2nd at the start. 4th gear tops out just past 120 with 4.10's and stock size tires and stock rev limiter.
I like my 4.10's, but I'll be stepping down to 3.73's if I ever need to replace my rear axle.

Roll on's from 40mph and up...advantage 3.73.
Dead stop launch (with proper grip)...advantage 4.10
As moose stated, you are stuck between 2nd and 3rd with the 4.10's at that speed. With the 3.73 you are at the beginning of the meat in 3rd...just gotta drop the hammer and let her eat!

I think the difference between 115-ish and just past 120 with 4.10's depends on whether you're shifting exactly at 6000 or going all the way to fuel cut which I think is 200 - 300 rpm higher. It's that close.
3.73's vs 4.10's in 2nd gear at 40 mph on stock-diameter tires is about 3800 rpm vs 4200 rpm. Traction (and your willingness to go a little past 6000) permitting, the 4.10's would be the stronger choice given that torque actually peaks up around 4500 rpm. For this very specific acceleration requirement, anyway.
Edit - I am also assuming that you have the TR3650 manual transmission. If you have an automatic or any other manual tranny the answer could easily be different.

Rolling starts are for those who can't drive! if you are at the track, you'll be in 4th gear crossing the line with 4.10s. You can launch pretty hard if you can find the grip. All around blast to drive.

Could be he isn't really racing. Or if he is, the competition is AWD and he's making them come to him.
How good your RT and short times are doesn't count for squat if, say, you're accelerating out of a slow corner on a road course. Or out of a fairly tight Interstate on-ramp, for that matter.
